What's Cooking at Sofia's: Cream of Cauliflower

This cauliflower soup recipe was taken from one of my grandmother's cookbooks she left me. Imagine a nice, smooth and velvety soup that will warm you all up after a day's work.

Portuguese are known for their soups and I cannot think of any better dish to start our dinner meals as the cold settles in here in Wisconsin. This cauliflower soup recipe was taken from one of my grandmother's cookbooks she left me. Imagine a nice, smooth and velvety soup that will warm you all up after a day's work.

INGREDIENTS

1 cauliflower
2 cups of beef stock or vegetable stock
1 cup of whole milk or heavy cream
1 tbsp butterparsley leaves
salt & pepper to taste

DIRECTIONS

  1. Boil the cauliflower in water and a pinch of salt until well cooked
  2. Remove the water and pass the cauliflower through a food mill
  3. Place it back in the pot and add the stock and milk
  4. Bring it to a boil for about 6 minutes
  5. Prior to serving add the butter
  6. Serve it garnished with a few parsley leaves
