Sussex Gives Green Light to New Restaurant on Main Street

Boneyard Pub & Grille could open by Sept. 1 at old Seigo's Steakhouse location.

Sussex residents better get their appetites ready as plans for the village's newest restaurant are moving forward.

The village Plan Commission gave unanimous approval Thursday for The Boneyard Pub & Grille to open up in the former Seigo’s Steakhouse location at N64w23180 Main St.

The Boneyard, which currently has a location at 215 Bay View Road in Mukwonago, will occupy the 19,600-square-foot building in Sussex by Sept. 1.

“I want this restaurant here,” Commissioner Steve Pellechia said. “I think it’s a great idea.”

The Boneyard offers a wide variety of of menu options, such as burgers, chicken wings, salads and sandwiches.

Jim Jones, owner of the restaurant, said he plans to serve breakfast in the Sussex location, which he currently doesn’t do in Mukwonago.

“We consider ourselves to be high-end pub food and a family-style restaurant,” he said. “We’d like to bring that to Sussex.”

Kasey Fluet, assistant development director for Sussex, said the restaurant lacks the necessary parking spaces in order to operate in the village, however, the owner of a storage facility next to the planned restaurant has indicated he is willing to allow for overflow parking at his business.

Jones will not have to return to the Plan Commission for further approval, but sign changes will be subject to review by the Architectural Review Board.
