Oatmeal Craisin Muffins

2 cups rolled oats (not quick cooking!)
1 1/2 cup milk
1 1/2 cups white whole wheat flour
1 Tbsp. baking powder
1/2 tsp salt
1/4 tsp cinnamon
2 large eggs, lightly beaten
1/2 cup firmly packer light brown sugar
1/2 cup (1 stick) butter, melted and slightly cooled
1 tsp vanilla
1/2 cup craisins (works with raisins as well)

Prehet oven to 400°F
Grease a 12 cup muffin tin

In a medium bowl, mix the oats and milk. Set aside for at least 10 minutes.

Meanwhile, in a large bowl, mix together the dry ingredients, making a well in the center. Stir in the liquid ingredients and the oatmeal mixture until just combined, being careful not to overmix. Fold in craisins. Batter may be lumpy.

Divide dough evenly among the 12 muffin cups. Bake for 16-18 minutes until light golden or a toothpick inserted into center of mfuffin comes out with moist crumbs. Do NOT overbake!
