This is recipe from my husband's side, which I absolutely LOVE, and it is so very easy to make. Now, of course, both my daughters will lick all of the cream cheese off the celery and give me the rest to eat!
INGREDIENTS
1 celery stalk / bunch
1 8oz. soften cream cheese
1 cup of green olives stuffed with red pimentos
A dash of paprika
Salt/pepper to taste
DIRECTIONS
- In a bowl, mix the cream cheese with paprika, salt and pepper
- Chop the olives real small, and then add to the cream cheese
- Use a potato peeler to softly peel the outsides of the celery sticks (this way you will not feel the strings when biting on it)
- Cut the celery stick to about 2 inches in length
- Fill each stick with the cream cheese mixture and they are ready to serve

First off: Smart idea to peel the celery strings off. I've never heard of people doing that. I know a lot of people (especially kids) don't like celery for that reason. Secretly, though, it's my favorite part. hah!

You like the strings? funny. Actually oddly enough my toddler does not mind them at all as by the time I am trying to remove them she is already eating the stalks!

Craig: LOL... too funny as that has happened to me so very often, then I look all over fridge and pantry, what can I use now? And you are right, it goes well on so many things, I have tried also with cut up peppers, sliced cucumbers, etc. Am glad you liked it on toasted bagel though!
